Instant Pot Chicken Tacos

Ingredients

  • 2 chicken breasts
  • Juice of 1 lime
  • 1 packet taco seasoning (e.g., @sietefoods)
  • 1 cup salsa (e.g., @aldiusa organic salsa)
  • 1/2 cup bone broth
  • Taco shells
  • Feta cheese
  • Avocado

Preparation

  1. Add a little bit of olive oil to the instant pot.

  2. Place the chicken breasts in the instant pot.

  3. Sprinkle taco seasoning on top of the chicken.

  4. Squeeze lime juice over the chicken.

  5. Pour salsa over the chicken.

  6. Add bone broth to the instant pot.

  7. Cook on high pressure for 15 minutes, then allow for a 10-minute natural release. Release any remaining steam using the quick release method.

  8. Transfer the cooked chicken to a bowl and shred it.

  9. Fill taco shells with the shredded chicken.

  10. Add desired toppings such as feta cheese and avocado.

  11. Serve and enjoy! Makes enough meat for about 5 tacos.
