
Keralan Chicken & Smokey Aubergine Curry

Ingredients
- 2 supreme of chicken
- 1 tsp rapeseed oil
- 1 tsp lemon juice
- 1/2 tsp turmeric powder •
- 1 medium aubergine
- 1 tbsp rapeseed oil
- 1/2 finely chopped onion
- 1/2 tsp black mustard seeds
- 1/2 tsp turmeric powder
- 1/2 tsp ground cinnamon
- 1/2 tsp salt
- 200ml coconut milk
- 200ml chicken stock
- 2 tsp lime juice
- 1 tsp sugar
- 3 tbsp plain yoghurt
- 1 tsp garam masala
- handful chopped fresh coriander
- for the curry paste:
- 1 tbsp rapeseed oil
- 1/2 medium onion chopped
- 1 tbsp chopped garlic
- 1 tbsp chopped root ginger
- 1 tbsp coriander seeds
- 1 tsp fennel seeds
- 1 green chilli chopped
- 8 black peppercorns
- 4 green cardamom - seeds only
- 1/2 tsp chilli flakes (optional)
- 6 cherry tomatoes
- 100mls water
