Salt & Pepper Chicken and Chips

Ingredients

  • chicken breast
  • cornflour
  • breadcrumbs
  • the Kerala seasoning
  • salt and pepper
  • some oil
  • some onions and peppers
  • garlic and fresh chilli
  • few tbsps of soy sauce
  • half tbsp white wine vinegar
  • some potatoes
  • crispy kale
  • coriander and spring onions

Preparation

  1. I just dipped some diced chicken breast in a dry mix (could dip in egg and then this but I had no egg), of some cornflour, breadcrumbs, the Kerala seasoning, salt and pepper. I then fried the chicken in some oil! Not deep fry, I just added a few tbsp to a non-stick pan to get the chicken all crispy! ⁣

  2. In a separate pan I fried off some onions and peppers, to this i added some @verylazyfooduk chopped garlic and fresh chilli! After frying for a few minutes I added a good few tbsps of soy sauce, half tbsp white wine vinegar and tbsp of the Kerala seasoning. Once the liquid reduced down I added this to the chicken and tossed in a pan to coat! ⁣

  3. S & P CHIPS ⤵️⁣

  4. For the chips I just sliced some potatoes up and put them in the microwave for a few minutes until slightly soft! I then coated them in some salt, pepper and oil and cooked them in the oven at 220 until crispy! Once done I tossed in the same onion & pepper mix that I used for the chicken! ⁣

  5. All served with some crispy kale as ‘seaweed’ and curry sauce

  6. Topped with coriander and spring onions
