Teriyaki Chicken & Pineapple Rice

Ingredients

  • 2 cloves garlic - I used @verylazyfooduk
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 3 tablespoons rice vinegar
  • 1/2 teaspoon ground ginger
  • some salt & pepper

Preparation

  1. Once marinated for at least half an hour I fried off an onion and added the chicken, making sure to reserve the rest of the marinade for later. Once the chicken was nearly cooked I added in the marinade and let this thicken. Top with sesame seeds, spring onions and coriander

  2. For the rice: I just boiled some rice in some vegetable stock, salt and pepper, with the addition of some pineapple chunks in the water! It was so yummy ? served in a pineapple bowl (just scope out the pineapple), with some crispy kale and lime wedges
