10-Minute Vegan Mac and Cheese

Ingredients

  • 200g macaroni
  • 100ml oat milk
  • 120g vegan double cream
  • 60g grated plant-based melting mature cheese
  • 35g plant butter
  • 8g nutritional yeast
  • 10ml white vinegar
  • 5g garlic powder
  • 5g onion powder
  • 5g sugar
  • 2 tsp miso paste
  • Black and white pepper, to taste

Preparation

  1. Add cheese, butter, nutritional yeast, vinegar, garlic and onion powder, sugar, and salt into a bowl.

  2. Bring a large pot of salted water to boil. Add macaroni. Cook pasta al dente, according to instructions. Drain pasta but don't rinse.

  3. In the same pan, turn heat to medium, then re-add cooked macaroni, and stir in oat milk, cream and ingredients from step 1.

  4. Continue cooking, stirring constantly, until cheese is melted, and the sauce is smooth and thickened. Add pepper to taste, then stir through miso paste. Serve hot, topped with extra nooch.
