15 Minute Saucy Coconut Noodles

Ingredients

  • 50 grams Soba noodles, or noodle of your choice
  • 1/2 small white onion, chopped small
  • 1 tsp sesame oil for cooking the onion
  • 2 tsp curry powder
  • 1 can coconut milk
  • 2 tsp sugar
  • 1/2 tsp salt
  • 1/2 cup raw firm tofu, cubed
  • 3/4 cup broccoli, cut into small florets
  • Sesame seeds oil to finish
  • Handful of fresh cilantro leaves, torn

Preparation

  1. Cook the noodles separately according to package directions.

  2. While the noodles cook, heat 1 tsp sesame oil in a medium pot and add the chopped onion.

  3. Cook for 4-5 minutes until starting to glisten.

  4. Add curry powder and cook until fragrant, about 1-2 minutes.

  5. Stir in the coconut milk, sugar and salt and simmer the sauce for 5 minutes.

  6. When the noodles are ready, drain.

  7. Add the broccoli and tofu and cook until the broccoli is tender and bright green, about 3-4 minutes.

  8. Serve hot with sesame oil and cilantro.
