Black Bean + Sweet Potato Chili

Ingredients

  • 1 1/2 jars of tomato sauce (low sodium)
  • 2 cups of vegetable broth (low sodium)
  • 1 can of unsalted organic black beans (bpa free)
  • 1 cup of brown rice
  • 1 large sweet potato
  • 1 1/2 red pepper
  • 2 tbsp of avocado oil
  • 1/2 cup of diced onion
  • 4 garlic gloves

Preparation

  1. Place your vegetable broth and tomato sauce with black beans and cooked @lundbergfarms brown rice on low heat in a medium/large pot

  2. Place your garlic and onion in medium heated pan with 2 tbsp of @primalkitchenfoods avocado oil and cook until the onion is slightly translucent and turn heat off

  3. Now in another pan, cook your sweet potato in high heat/boiling water until tender (about 20-30 minutes)

  4. Once sweet potato is tender, dice up and place with onions and garlic

  5. Next, dice your pepper and place with onions and garlic as well

  6. Turn heat back on low and sautéed all the vegetables together for 5-8 and place in chili pot

  7. Turn the chili pot on medium heat and cook for 15 minutes while adding seasonings of choice

  8. I added some sriracha, turmeric powder, cayenne pepper, himalayan salt, and cumin

  9. In my bowl, i topped it with @soomfoods tahini + green onions

  10. Enjoy!
