Braised Green Cabbage with Pierogis

Ingredients

  • 1/2 head green cabbage, cut in wedges
  • 1 yellow onion, thinly sliced
  • 5 cremini mushrooms, sliced
  • 2 fistfuls spinach
  • 2 tablespoons olive oil
  • 1/2 cup apple cider vinegar
  • 1 cup apple cider
  • Sea salt and cracked pepper, to taste
  • 1/2 cup walnut tofu meat

Preparation

  1. Heat oil in a large pan that has a lid.

  2. Sear the cabbage and set it aside.

  3. Add sliced onions to the same pan and cook for 6-7 minutes or until onions are soft.

  4. Add mushrooms and sauté.

  5. Add apple cider vinegar, lifting any brown bits from the bottom of the pan, and cook for 3 minutes.

  6. Add apple cider and cook again for several minutes.

  7. Add cabbage back to the pan with spinach, cover with lid, and cook for 15-20 minutes.

  8. When ready to serve, sprinkle in 1/2 cup walnut tofu meat and serve with pierogis, coconut kefir, and green onions. Season well.

Notes

  1. This dish uses store-bought pierogis and is designed as a comforting vegan meal.
