Braised Green Cabbage with Pierogis
Ingredients
- 1/2 head green cabbage, cut in wedges
- 1 yellow onion, thinly sliced
- 5 cremini mushrooms, sliced
- 2 fistfuls spinach
- 2 tablespoons olive oil
- 1/2 cup apple cider vinegar
- 1 cup apple cider
- Sea salt and cracked pepper, to taste
- 1/2 cup walnut tofu meat
Preparation
Heat oil in a large pan that has a lid.
Sear the cabbage and set it aside.
Add sliced onions to the same pan and cook for 6-7 minutes or until onions are soft.
Add mushrooms and sauté.
Add apple cider vinegar, lifting any brown bits from the bottom of the pan, and cook for 3 minutes.
Add apple cider and cook again for several minutes.
Add cabbage back to the pan with spinach, cover with lid, and cook for 15-20 minutes.
When ready to serve, sprinkle in 1/2 cup walnut tofu meat and serve with pierogis, coconut kefir, and green onions. Season well.
Notes
This dish uses store-bought pierogis and is designed as a comforting vegan meal.
