Chickpea Masala Potatoes

Ingredients

  • - 1 tbsp ginger, minced
  • - 2 garlic cloves
  • - 1 tbsp Garam Masala spice
  • - 1/2 tbsp cumin
  • - 1 tsp cardamom
  • - 1/2 cup crushed tomatoes
  • - 1 cup coconut milk (canned, full fat)
  • - 1 can chickpeas (230g drained)
  • - Juice of 1 lime
  • - Fresh spinach (or chard)

Preparation

  1. Sauté garlic and ginger then add spices together with water and cook on medium heat until it forms a paste

  2. Add crushed tomatoes and coconut milk, bring to a simmer. Then add drained chickpeas and let simmer for about 5 minutes

  3. Turn off heat and add spinach & lime juice

  4. Serve with baked potatoes and top with coconut yogurt and coriander
