Chickpea Masala Potatoes
Ingredients
- - 1 tbsp ginger, minced
- - 2 garlic cloves
- - 1 tbsp Garam Masala spice
- - 1/2 tbsp cumin
- - 1 tsp cardamom
- - 1/2 cup crushed tomatoes
- - 1 cup coconut milk (canned, full fat)
- - 1 can chickpeas (230g drained)
- - Juice of 1 lime
- - Fresh spinach (or chard)
Preparation
Sauté garlic and ginger then add spices together with water and cook on medium heat until it forms a paste
Add crushed tomatoes and coconut milk, bring to a simmer. Then add drained chickpeas and let simmer for about 5 minutes
Turn off heat and add spinach & lime juice
Serve with baked potatoes and top with coconut yogurt and coriander
