Chickpea Tomato and Broccoli Curry

Ingredients

  • 1 cup finely chopped onion
  • 1 tbsp oil
  • 3-4 garlic cloves minced
  • 1 cup sliced cherry tomatoes
  • 1 tsp chili powder
  • 1 tsp kosher salt
  • 1/2 tsp pepper
  • 2 tsp ground coriander
  • 1 tsp cumin
  • 1 tbsp curry powder
  • 1 tsp garlic powder
  • 1 1/2 cups crushed tomatoes
  • 2 15 oz. cans chickpeas
  • 2 cups broccoli florets
  • 1 15 oz. can coconut milk

Preparation

  1. Add onion and oil to a large skillet and cook over medium heat for 5 minutes, stirring often.

  2. Add sliced cherry tomatoes, minced garlic and all the seasonings. Cook for 3 minutes, stirring often.

  3. Add crushed tomatoes, drained and rinsed chickpeas, broccoli and coconut milk. Stir, cook at a gentle simmer for 10 minutes or until broccoli is tender.
