Chickpea Tomato and Broccoli Curry
Ingredients
- 1 cup finely chopped onion
- 1 tbsp oil
- 3-4 garlic cloves minced
- 1 cup sliced cherry tomatoes
- 1 tsp chili powder
- 1 tsp kosher salt
- 1/2 tsp pepper
- 2 tsp ground coriander
- 1 tsp cumin
- 1 tbsp curry powder
- 1 tsp garlic powder
- 1 1/2 cups crushed tomatoes
- 2 15 oz. cans chickpeas
- 2 cups broccoli florets
- 1 15 oz. can coconut milk
Preparation
Add onion and oil to a large skillet and cook over medium heat for 5 minutes, stirring often.
Add sliced cherry tomatoes, minced garlic and all the seasonings. Cook for 3 minutes, stirring often.
Add crushed tomatoes, drained and rinsed chickpeas, broccoli and coconut milk. Stir, cook at a gentle simmer for 10 minutes or until broccoli is tender.
