Chickpea, Corn and Black Bean Curry

Ingredients

  • 2 tsp oil
  • 1 medium onion finely chopped
  • 2.5 tsp garlic powder
  • 1 tbsp ground coriander
  • 1 tsp chili powder
  • 1/4 tsp cinnamon
  • 2 3/4 tsp cumin
  • 2 tsp curry powder
  • 1/2 cup marinara or tomato sauce
  • 3/4 tsp to 1 tsp kosher salt
  • 1/4 tsp pepper optional
  • 3/4 of a 15 oz. can black beans, drained and rinsed
  • 3/4 of a 15 oz. can chickpeas, drained and rinsed
  • 3/4 cup cooked or frozen corn
  • 1 can coconut milk full fat

Garnishes

  • chopped cilantro or other preferred fresh herbs as desired
  • red chili flakes as desired

Preparation

  1. Saute onions in oil until translucent, stirring every couple of minutes.

  2. Add spices, stir and cook for another couple of minutes.

  3. Add remaining ingredients and stir well.

  4. Cook at a gentle simmer for around 7 minutes until slightly thickened.

  5. Serve with cilantro and red chili flakes if desired.
