Chickpea Stuffed Sweet Potatoes with Bbq Sauce and Cheese
Ingredients
- 4 medium sweet potatoes (preferably the same size)
- 1 can chickpeas
- 1 medium onion, diced
- 1 bell pepper, diced
- 1 cup shredded cheddar cheese
- 1/2-1 bottle of sweet and spicy BBQ sauce
- Diced green onions
Preparation
Preheat oven to 400°F (200°C).
Scrub the sweet potatoes, rub them with oil, and season with salt. Poke holes in them with a fork and bake them for 1 hour, or until tender.
While the sweet potatoes are baking, sauté the diced onions and bell peppers in oil for about 4 minutes, until they are softened.
Add the rinsed and drained chickpeas to the sautéed vegetables and continue to cook for 5 more minutes.
Pour in the sweet and spicy BBQ sauce and let the mixture simmer for a few more minutes. If the mixture seems too thick, you can add a splash of water or vegetable broth to thin it out.
Carefully slice open the baked sweet potatoes and stuff them with the chickpea and vegetable mixture.
Sprinkle the shredded cheddar cheese over the stuffed sweet potatoes.
Return the stuffed sweet potatoes to the oven for about 5 minutes, or until the cheese has melted.
Once the cheese is melted and bubbly, remove the sweet potatoes from the oven.
Garnish the stuffed sweet potatoes with diced green onions.
Serve the chickpea stuffed sweet potatoes while they're hot and enjoy!
