Creamy Vegetable Pasta Delight

Ingredients

  • C.a 250g pasta
  • 1 zucchini
  • 1 aubergine (eggplant)
  • Brussel sprouts
  • Vegan chicken pieces or smoked tofu
  • Vegan oatcream or other cooking cream
  • Garlic
  • Thyme
  • Salt
  • Pepper
  • Any other additional veggies you want

Preparation

  1. Boil the pasta according to instructions.

  2. In a pan, fry 3 garlic cloves in a generous amount of oil.

  3. Chop the zucchini and eggplant into small pieces, and add them to the frying pan. Fry for 5-10 minutes.

  4. Add the vegan chicken pieces (or smoked tofu) along with thyme, salt, and pepper. Cook until the chicken pieces are golden brown.

  5. Pour in about 300ml of vegan oatcream.

  6. Once the pasta is cooked, add it to the sauce and mix everything together.

  7. Top with roasted nuts or roasted brussel sprouts.
