Creamy Vegan Pasta with Tofu and Vegetables

Ingredients

  • Oat cooking cream (@planti_sverige)
  • 2 minced garlic cloves
  • Chilli flakes
  • Salt & pepper
  • Lemon juice (1/4 or 1/2 lemon)
  • Optional: sesame seeds oil, Japanese soy sauce, or miso

Preparation

  1. In a bowl, mix the oat cooking cream, minced garlic cloves, a pinch of chili flakes, and season with salt and pepper.

  2. Squeeze in the lemon juice (use 1/4 to 1/2 lemon, according to taste).

  3. If desired, add a drizzle of sesame seeds oil, Japanese soy sauce, or miso for extra umami flavor.

  4. Stir all the ingredients together until well combined to create a creamy sauce.

  5. Cook your favorite pasta according to the package instructions. Drain and set aside.

  6. In a separate pan, sauté your choice of vegetables (like broccoli, bell peppers, and spinach) until tender.

  7. Add cubed tofu to the pan and cook until lightly golden and heated through.

  8. Pour the creamy sauce over the cooked pasta and mix well to coat.

  9. Add the sautéed vegetables and tofu to the pasta and gently toss to combine everything.

  10. Serve the creamy vegan pasta in bowls and garnish with vegan parmesan if desired.
