Fresh Salmon Bowls with Basil Dressing

Ingredients

  • corn
  • oil
  • salt
  • pepper
  • cherry tomatoes
  • salmon
  • spice mix
  • rice
  • avocado
  • basil
  • garlic
  • red wine vinegar
  • olive oil

Preparation

  1. Cook corn on high heat in oil with salt and pepper.

  2. Add cherry tomatoes and cook for a few more minutes.

  3. Pat dry salmon.

  4. Cook salmon on high heat with your favorite spice mix, skin side up, for 4-5 minutes.

  5. Flip salmon and cook for another 4 minutes.

  6. Assemble over rice with avocado and basil dressing.

  7. For the dressing, blend basil with garlic, red wine vinegar, and olive oil.
