Fresh Salmon Bowls with Basil Dressing
Ingredients
- corn
- oil
- salt
- pepper
- cherry tomatoes
- salmon
- spice mix
- rice
- avocado
- basil
- garlic
- red wine vinegar
- olive oil
Preparation
Cook corn on high heat in oil with salt and pepper.
Add cherry tomatoes and cook for a few more minutes.
Pat dry salmon.
Cook salmon on high heat with your favorite spice mix, skin side up, for 4-5 minutes.
Flip salmon and cook for another 4 minutes.
Assemble over rice with avocado and basil dressing.
For the dressing, blend basil with garlic, red wine vinegar, and olive oil.
