German Potato Soup with Vegetables and Croutons

Ingredients

  • 1-3 onions
  • 1 pack soup vegetables (500g)
  • Vegetable stock
  • Salt and pepper
  • Soy cream
  • Nutmeg
  • 15 potatoes
  • 1 baguette

Preparation

  1. Chop the onions and roast in a pot

  2. Add the potatoes (peeled and chopped)

  3. Chop the soup vegetables and add to the pot

  4. Mix 1.5 liters of water with the vegetable stock and add it to the pot

  5. Cook until the vegetables are soft

  6. Puree the soup, leave little bits if you want or puree it completely smooth

  7. Add the soy cream

  8. Spice it with nutmeg, salt and pepper

  9. Cut the bread in cubes and fry in olive oil to make croutons or just serve the baguette in slices
