Easy Creamy Asparagus Vegetable Soup
Ingredients
- 1 onion
- 1 package soup vegetables
- Salt and pepper
- Soy cream or coconut milk
- Nutmeg
- Oil
- 15 asparagus spears
- Pinch of sugar
- Splash of lemon
Preparation
Chop the onion and roast in oil in a pot
Chop the asparagus and add to the pot
Chop the soup vegetables and add to the pot
Add 600-800ml of water
Cook until the vegetables are soft
Take out some of the asparagus spears
Puree the soup, leave little bits if you want or puree it completely smooth, then add the soy cream or coconut milk
Season with nutmeg, lemon, sugar, salt and pepper
Serve with the remaining asparagus spears
