Easy 4-Ingredient Leek and Potato Soup

Ingredients

  • 3 leeks
  • 3 Yukon gold potatoes
  • Oil
  • Salt and pepper or seasoning of choice like thyme

Preparation

  1. Cut up potatoes and leeks into slices and boil and toss in olive oil for 3-5 minutes then add 3 cups of water and let it simmer for 15-20 minutes

  2. Add in salt, pepper or your choice of seasoning like herbamare or stock

  3. Stir through and let it cook for another 5-10 minutes

  4. Blitz the soup with a hand stick or mixer until super creamy and clear

  5. Serve with garlic toast or garlic croutons
