Easy 4-Ingredient Leek and Potato Soup
Ingredients
- 3 leeks
- 3 Yukon gold potatoes
- Oil
- Salt and pepper or seasoning of choice like thyme
Preparation
Cut up potatoes and leeks into slices and boil and toss in olive oil for 3-5 minutes then add 3 cups of water and let it simmer for 15-20 minutes
Add in salt, pepper or your choice of seasoning like herbamare or stock
Stir through and let it cook for another 5-10 minutes
Blitz the soup with a hand stick or mixer until super creamy and clear
Serve with garlic toast or garlic croutons
