Harees ( Barely ) Soup

Ingredients

  • 2 cups harees ( barley) soaked over night
  • 1 cup mushrooms cubed
  • 1 cup vegan milk
  • 2 onions cut
  • 1 garlic clove crushed
  • 1 stock cube
  • salt , pepper and cumin as desired
  • 1 fresh lemon

Preparation

  1. Sauté onions and garlic

  2. Add mushrooms and cook until water evaporates

  3. Add harees ( barely) and stock cup

  4. Cover with milk and boiling water until it raises above the level of harees ( barely) by 5 to 8 cm

  5. Let soup cook on high heat until it boils

  6. Once boiling, lower heat and cook for 1 hour or grains may be mashed with fingers ( you may place a metal sheet until the pot to lower the heat )

  7. Add salt pepper and cumin as desired

  8. Squeeze the lemon once served and enjoy
