Harees ( Barely ) Soup
Ingredients
- 2 cups harees ( barley) soaked over night
- 1 cup mushrooms cubed
- 1 cup vegan milk
- 2 onions cut
- 1 garlic clove crushed
- 1 stock cube
- salt , pepper and cumin as desired
- 1 fresh lemon
Preparation
Sauté onions and garlic
Add mushrooms and cook until water evaporates
Add harees ( barely) and stock cup
Cover with milk and boiling water until it raises above the level of harees ( barely) by 5 to 8 cm
Let soup cook on high heat until it boils
Once boiling, lower heat and cook for 1 hour or grains may be mashed with fingers ( you may place a metal sheet until the pot to lower the heat )
Add salt pepper and cumin as desired
Squeeze the lemon once served and enjoy
