Homemade Cornmeal Pancakes with Banana and Spices
Ingredients
- 1 cup fine ground cornmeal flour
- 1/2 cup whole wheat pastry flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp cardamom
- 1 tsp cinnamon
- 1 tbsp ground flax seeds
- 1/4 tsp salt
- 1 mashed banana
- 1 tsp vanilla extract
- 1 tbsp maple syrup
- 1 tbsp vinegar
- 1 1/2 cup almond milk
Preparation
In a medium bowl combine all dry ingredients and whisk together.
Add mashed banana and remaining liquids. Whisk together and allow batter to sit for 3-5 minutes.
While waiting for the batter, preheat a griddle or pan. If you are using a non-stick pan feel free to lightly grease to prevent sticking.
Scoop out 1/3 cup batter and pour onto the griddle or pan. Allow pancakes to cook for about 3 minutes or when bubbles appear on the surface then flip to the other side to cook.
Repeat with the remaining batter until all pancakes are made. Serve and enjoy.
