Homemade Cornmeal Pancakes with Banana and Spices

Ingredients

  • 1 cup fine ground cornmeal flour
  • 1/2 cup whole wheat pastry flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp cardamom
  • 1 tsp cinnamon
  • 1 tbsp ground flax seeds
  • 1/4 tsp salt
  • 1 mashed banana
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup
  • 1 tbsp vinegar
  • 1 1/2 cup almond milk

Preparation

  1. In a medium bowl combine all dry ingredients and whisk together.

  2. Add mashed banana and remaining liquids. Whisk together and allow batter to sit for 3-5 minutes.

  3. While waiting for the batter, preheat a griddle or pan. If you are using a non-stick pan feel free to lightly grease to prevent sticking.

  4. Scoop out 1/3 cup batter and pour onto the griddle or pan. Allow pancakes to cook for about 3 minutes or when bubbles appear on the surface then flip to the other side to cook.

  5. Repeat with the remaining batter until all pancakes are made. Serve and enjoy.
