Potato Salad

Ingredients

  • 3 boiled potatoes cut in bite size pieces
  • 1 small or 1/2 cup red onion finely chopped
  • 4 tbsp nonfat greek yoghurt
  • 2 tsp jalapeno mustard or dijon mustard
  • 2 tsp capers chopped
  • 1 jalapeno or chilli chopped (optional)
  • 1/2 tsp lemon juice
  • 2 tsp finely chopped fresh dill finely chopped
  • black pepper powder and red chilli powder or cayenne pepper to taste
  • salt to taste.
  • few assorted greens (optional).

Preparation

  1. In a big mixing bowl add the potatoes (slightly warm), onion and 1/2 of the dill

  2. Toss them well and keep it aside

  3. In a mixing bowl whisk well together greek yogurt, dijon mustard or jalapeno mustard, salt and spice powders together

  4. Now add the chilli or jalapeno, capers and lemon juice, mix again

  5. Pour this dressing over the potatoes

  6. Toss the potatoes well with this dressing

  7. To serve, in a plate place the greens and place the salad over the greens
