Rainbow Quinoa Sushi Rolls
Ingredients
- 2 cups cooked quinoa
- 1 chia egg (made with 1 tablespoon chia seeds and 3 tablespoons water)
- 2 tablespoons rice vinegar
- Seaweed sheets
- Yellow bell pepper
- Sweet potato
- Blue potatoes
- Zucchini
- Carrot sticks
- Beets
- Spinach
Preparation
Mix the cooked quinoa with the chia egg and rice vinegar to create a sticky mixture.
Use seaweed sheets to roll up the mixture with the prepared vegetables.
Dip the rolls in soy sauce and wasabi, then enjoy.
