Roasted Garlic Pasta with Lemon

Ingredients

  • 4 heads of garlic
  • Oil (for drizzling and blending)
  • 3/4 cup (180ml) unsweetened oat milk or vegan cream
  • Salt and pepper to taste
  • Zest of 1/2 lemon
  • A pinch of sugar
  • A bunch of fresh basil
  • 1/2 cup (120ml) pasta water
  • 250g pasta

Preparation

  1. Drizzle the garlic heads with oil and roast them in the oven at 190°C (390°F) for 20-25 minutes.

  2. Blend the roasted garlic with a splash of oil.

  3. Add the blended garlic to a pan.

  4. Add 3/4 cup plant milk, salt and pepper to taste, zest of 1/2 lemon, and a pinch of sugar to the pan.

  5. Simmer the mixture for 10 minutes.

  6. Cook 250g pasta according to package instructions.

  7. Add a bunch of fresh basil and 1/2 cup pasta water to the sauce.

  8. Stir everything together and heat until creamy.

Tips

  1. Roasting garlic makes it sweet and less dominant in flavor.

  2. Combine with lemon zest and herbs for a fresh and creamy taste.
