Sesame-Glazed Golden Vegetable Rice Bowl

Ingredients

  • 2 portions rice
  • 3 carrots
  • 1/2 cauliflower
  • 1 red paprika
  • 2 handful mushrooms
  • 50ml soy sauce
  • 1.5 tbsp starch
  • 1 tsp sambal olek (or other chili paste)
  • 1 thumb-sized piece of ginger
  • 1/4 tsp ground garlic
  • 3 tbsp maple syrup
  • 4 tbsp sesame oil
  • 3 tbsp water
  • Juice of 1 lime
  • 2 tbsp sesame seeds

Preparation

  1. Cook the rice.

  2. Roast the sesame seeds without oil until golden, then place them on a plate and set aside.

  3. Slice the carrots into slices and cut them into thirds.

  4. Cut the cauliflower into bite-sized pieces.

  5. Slice the red paprika and mushrooms into quarters.

  6. Chop the ginger into tiny pieces.

  7. Cook the cauliflower for about eight minutes, then add the carrots and cook for another five minutes.

  8. Mix the soy sauce, starch, sambal olek, maple syrup, sesame oil, water, ground garlic, and lime juice together in a bowl.

  9. Add some sesame oil to a pan and fry the chopped ginger.

  10. Add the mushrooms and red paprika to the pan, then add the rest of the vegetables.

  11. Pour the sauce over the vegetables and let it glaze until the sauce starts to thicken up.

  12. Mix in the roasted sesame seeds.

  13. Serve the glazed vegetables on top of the cooked rice.
