Simple Vegan Miso Soup
Ingredients
- 4 cups vegetable broth
- 1 tablespoon white miso
- 2 tablespoons minced ginger
- 1-2 tablespoons light soy sauce
- 1/2 block firm tofu
- 2 stalks green onions
Preparation
In a small pot, boil the stock, miso, 1 tablespoon soy sauce, ginger, and white ends of green onions for 10 minutes
Add the tofu cubes and green onion tops to the serving bowls
Strain the broth through a fine mesh strainer, pour it back into the pot, add 1-2 cups water to thin, taste and add more soy sauce as desired, then bring back to a boil
Pour the broth into the bowls over the tofu and green onions and enjoy immediately
Tips
Straining removes foam and boiled white parts of the onion for a golden and translucent broth
This soup is good on its own or as a meal starter to warm up your palate
