Simple and Quick Miso Soup

Ingredients

  • 4 cups vegetable broth
  • 1 tablespoon white miso
  • 2 tablespoons minced ginger
  • 1-2 tablespoons light soy sauce
  • 1/2 block firm tofu
  • 2 stalks green onions

Optional items

  • Thin carrot coins
  • Noodles

Preparation

  1. In a small pot, boil the vegetable broth, white miso, 1 tablespoon soy sauce, minced ginger, and white parts of green onions for 10 minutes.

  2. Add the cubed tofu and green parts of green onions to serving bowls.

  3. Strain the broth through a fine mesh strainer.

  4. Pour the strained broth back into the pot and add 1-2 cups water to thin it out.

  5. Taste the broth and add more soy sauce as desired.

  6. Bring the broth back to a boil.

  7. Pour the hot broth over the tofu and green onions in the bowls.

  8. Serve immediately.

Optional additions

  1. If using, add thin carrot coins and noodles to the bowls before pouring the broth.

Tips

  1. Straining the broth removes foam and boiled white onion parts, resulting in a golden and translucent broth.

  2. This soup can be enjoyed on its own or as a meal starter to warm up your palate.
