Soul Fuel ?? C O N G E E

Ingredients

  • 1 cup brown rice washed
  • • 4 cups chicken bone broth
  • • 1 inch knob of ginger grated
  • • 1 small sweet potato diced into 2cm cubes
  • • 1/2 cup dried shiitake shrooms
  • • 1/2 mixed dried shrooms
  • • 4 cups warm water
  • • 1 small bunch of dark ? (I used chard)
  • Toppings
  • • Chilli flakes/oil
  • • Green onions
  • • Kimchi
  • • squeeze of lemon juice
  • • sesame seeds

Preparation

  1. Turn on slow cooker on low

  2. Add washed rice + broth + sweet potato + ginger - cover & begin to cook

  3. Soak mushrooms in the warm water for 20mins

  4. Add hydrated mushrooms + strained mushroom stock to cooker

  5. Continue to cook for another 2 hrs

  6. Add greens, fold through & let them welt

  7. Serve warm with yummy spicy toppings

  8. This meal provided me with lunch every day this week — much to the dismay of my colleagues who I feel legit wanted to pull my hair in a jealous rage ? sorry guys, you can have your average tuna salad & your unsatisfied brains .. & I guarantee you this was less fuss & more cost effective
