Soul Fuel ?? C O N G E E
Ingredients
- 1 cup brown rice washed
- • 4 cups chicken bone broth
- • 1 inch knob of ginger grated
- • 1 small sweet potato diced into 2cm cubes
- • 1/2 cup dried shiitake shrooms
- • 1/2 mixed dried shrooms
- • 4 cups warm water
- • 1 small bunch of dark ? (I used chard)
- Toppings
- • Chilli flakes/oil
- • Green onions
- • Kimchi
- • squeeze of lemon juice
- • sesame seeds
Preparation
Turn on slow cooker on low
Add washed rice + broth + sweet potato + ginger - cover & begin to cook
Soak mushrooms in the warm water for 20mins
Add hydrated mushrooms + strained mushroom stock to cooker
Continue to cook for another 2 hrs
Add greens, fold through & let them welt
Serve warm with yummy spicy toppings
This meal provided me with lunch every day this week — much to the dismay of my colleagues who I feel legit wanted to pull my hair in a jealous rage ? sorry guys, you can have your average tuna salad & your unsatisfied brains .. & I guarantee you this was less fuss & more cost effective
