Roasted Delicata Squash with Brown Rice and Gremolata

Ingredients

  • Delicata Squash
  • Brown Rice

Gremolata

  • 1/4 cup fresh parsley
  • 1-inch piece of ginger
  • 1 garlic clove
  • zest and juice of one lemon
  • salt and fresh ground pepper

Preparation

  1. Preheat oven to 400°F

  2. Cut the delicata squash in half, remove seeds, and slice into crescents

  3. Toss squash slices with oil, salt, and pepper

  4. Roast in the oven for 20-25 minutes until tender

  5. Cook brown rice according to package instructions

  6. Pulse parsley, ginger, garlic, lemon zest and juice, salt, and pepper in a food processor until chopped.

  7. Serve the roasted squash over brown rice and top with gremolata
