Roasted Delicata Squash with Brown Rice and Gremolata
Ingredients
- Delicata Squash
- Brown Rice
Gremolata
- 1/4 cup fresh parsley
- 1-inch piece of ginger
- 1 garlic clove
- zest and juice of one lemon
- salt and fresh ground pepper
Preparation
Preheat oven to 400°F
Cut the delicata squash in half, remove seeds, and slice into crescents
Toss squash slices with oil, salt, and pepper
Roast in the oven for 20-25 minutes until tender
Cook brown rice according to package instructions
Pulse parsley, ginger, garlic, lemon zest and juice, salt, and pepper in a food processor until chopped.
Serve the roasted squash over brown rice and top with gremolata
