Spirulized Zucchini Noodles with Pesto

Ingredients

  • 2 packed cups fresh basil with spinach, kale or any other green you might have
  • few handful of whole black pepper and coriander
  • 2 tsp cayenne
  • 1/4 cup Brazil nuts
  • 1/4 cup olive oil
  • 1/4 cup nutritional yeast
  • 2 garlic cloves
  • Juice of one lemon
  • 1/2 tsp salt or for taste

Preparation

  1. Blend all ingredients for the pesto. Add more olive oil if needed

  2. Spiralize 4 zucchinis. Add the pesto to the zucchini noodles

  3. Optional, spiralize 2 zucchini with 250g of any gluten free pasta like brown rice or quinoa pasta

  4. Divide into 2 or 4 bowls

  5. Garnish with cherry tomatoes, fresh herbs or sprinkle some nutritional yeast for more cheese flavor
