Spirulized Zucchini Noodles with Pesto
Ingredients
- 2 packed cups fresh basil with spinach, kale or any other green you might have
- few handful of whole black pepper and coriander
- 2 tsp cayenne
- 1/4 cup Brazil nuts
- 1/4 cup olive oil
- 1/4 cup nutritional yeast
- 2 garlic cloves
- Juice of one lemon
- 1/2 tsp salt or for taste
Preparation
Blend all ingredients for the pesto. Add more olive oil if needed
Spiralize 4 zucchinis. Add the pesto to the zucchini noodles
Optional, spiralize 2 zucchini with 250g of any gluten free pasta like brown rice or quinoa pasta
Divide into 2 or 4 bowls
Garnish with cherry tomatoes, fresh herbs or sprinkle some nutritional yeast for more cheese flavor
