Comforting Chinese Chicken Noodle Soup

Ingredients

  • 1 medium chicken
  • Large bunch coriander
  • 4 cloves garlic
  • 2 red chillies cut in half
  • 1 onion, peeled and cut in half
  • Two 1 inch pieces of ginger, peeled
  • 1 tsp salt
  • Vegetables of your choice. I used mange tout, baby sweetcorn, mushrooms, carrots, broccoli, bok choi
  • Noodles of your choice. I used rice noodles
  • Toasted sesame oil
  • Chilli flakes to serve
  • Tamari or soy sauce to serve
  • Lime to serve
  • Coriander to garnish
  • Sesame seeds to garnish

Preparation

  1. Put the chicken, coriander, garlic, chillies, onion, ginger and salt in a large pan. Cover with water, bring to the boil and simmer for 1.5 hours. Skim off any scum that forms on the top

  2. Remove the chicken and set aside. Use a slotted spoon to remove everything else from the broth and discard (the chilli, garlic, coriander etc)

  3. Add whatever veggies you’re using to your broth and cook for a few minutes. Turn off the heat

  4. Prepare your noodles according to pack instructions and coat with sesame oil. Just enough to keep them from sticking together. Add to the broth

  5. When cool enough to handle, pick the meat off the chicken and add it to the broth stir through

  6. Serve with chilli flakes, tamari and lime.. add as much of each as you like

  7. Garnish with fresh coriander and sesame seeds
