Pak Min Chicken Soup
Ingredients
- 1 whole free-range chicken
- 1500 ml water
- 1 tablespoon oil for sautéing
- 1/2 large onion
- 2 ginger rhizomes or 5 cm ginger
- 2 cm cinnamon stick
- 4 cardamom pods
- Salt to taste
- Sugar to taste
- Stock powder to taste
- Lime
Ground spices
- 5 cloves garlic
- 1/4 teaspoon nutmeg powder
- 1 teaspoon black pepper powder
- 1/2 tablespoon dried shrimp
Garnishes
- Fried shallots
- Celery leaves
- Lime
Preparation
Wash the chicken thoroughly and cut to desired size, then rub with lime juice and set aside.
Prepare the ground spices and set aside.
Finely chop the onion and thinly slice or crush the ginger.
Sauté the ground spices until fragrant, then add the onion and ginger and sauté until fragrant. Add the chicken, stir briefly, and pour in the water.
Season with salt, sugar, stock powder, cinnamon stick, cardamom pods, black pepper powder, and additional ginger if the ginger aroma is not strong. Cover the pot and cook until the chicken is tender, then adjust seasoning to taste.
Serve with a sprinkle of celery leaves and fried shallots, and add a squeeze of lime for extra freshness.
