Tempeh with Pineapple Salsa Meal Prep

Ingredients

  • 1 (8 oz) tempeh package, sliced⠀
  • 1/4 cup coconut aminos⠀
  • 1 tbsp rice vinegar⠀
  • 1/2 tsp chili garlic sauce⠀
  • for the pineapple salsa (makes 16 oz) -⠀
  • 4 cups fresh pineapple⠀
  • 1/2 red bell pepper⠀
  • 1/2 jalapeño, deseeded⠀
  • handful cilantro⠀
  • zest and juice from 1 lime⠀
  • for the meal prep -⠀
  • cooked forbidden rice⠀
  • cooked or canned chickpeas⠀
  • avocado⠀
  • broccoli sprouts⠀
  • spinach⠀
  • cherry tomatoes⠀

Preparation

  1. Mix the coconut aminos, rice vinegar and chili garlic together

  2. Let the tempeh marinate

  3. You can also marinate the tempeh in just coconut aminos)

  4. Place all salsa ingredients in a food processor and process for 10 seconds or until desired consistency

  5. Place in food prep containers

  6. In a nonstick pan over medium heat, cook the tempeh on both sides for 4-5 minutes or until crispy

  7. Place the forbidden rice and tempeh in two food storage containers

  8. Add the rest of the meal prep ingredients

  9. You can add a squeeze of lemon juice to the avocado to prevent browning

  10. When ready to eat, add the salsa to the tempeh and enjoy!⠀
