Tempeh with Pineapple Salsa Meal Prep
Ingredients
- 1 (8 oz) tempeh package, sliced⠀
- 1/4 cup coconut aminos⠀
- 1 tbsp rice vinegar⠀
- 1/2 tsp chili garlic sauce⠀
- for the pineapple salsa (makes 16 oz) -⠀
- 4 cups fresh pineapple⠀
- 1/2 red bell pepper⠀
- 1/2 jalapeño, deseeded⠀
- handful cilantro⠀
- zest and juice from 1 lime⠀
- for the meal prep -⠀
- cooked forbidden rice⠀
- cooked or canned chickpeas⠀
- avocado⠀
- broccoli sprouts⠀
- spinach⠀
- cherry tomatoes⠀
Preparation
Mix the coconut aminos, rice vinegar and chili garlic together
Let the tempeh marinate
You can also marinate the tempeh in just coconut aminos)
Place all salsa ingredients in a food processor and process for 10 seconds or until desired consistency
Place in food prep containers
In a nonstick pan over medium heat, cook the tempeh on both sides for 4-5 minutes or until crispy
Place the forbidden rice and tempeh in two food storage containers
Add the rest of the meal prep ingredients
You can add a squeeze of lemon juice to the avocado to prevent browning
When ready to eat, add the salsa to the tempeh and enjoy!⠀
