Traditional Mamounia Semolina Dessert
Ingredients
- 1 cup fine semolina
- 2 cups sugar
- 2 tablespoons butter
- 5 cups water
- 1/4 cup orange blossom water
Qeshta
- 3 cups milk
- 2 tablespoons vinegar
Garnish
- Ground cinnamon
- Ground pistachio
Preparation
For the qeshta: In a medium-sized pot, place the milk on medium heat, let it boil, add the vinegar, stir until the milk separates and you get pieces of qeshta, place it in a strainer, transfer it to a plate and set aside.
In a medium-sized pot, place the water and sugar, let it boil on low heat for 8 minutes.
In a stainless steel pot, place the semolina, stir and leave it on medium heat with continuous stirring to toast and release its aroma.
Add the butter, stir to melt, add the semolina to the water and sugar mixture, leave it on low heat for 15 minutes with continuous stirring until the semolina grains open and cook completely, add the orange blossom water.
Distribute it in small plates, distribute the qeshta, garnish with pistachio and cinnamon.
