Chocolate Rice Pudding
Ingredients
- 5 cups milk
- 1 tablespoon rose water
- 1/2 cup short-grain Egyptian rice
- 1/2 cup sugar
- 5 mastic cloves
- 300 grams chocolate
Garnish
- Halabi pistachios
Preparation
Prepare suitable cups or a wide plate.
Wash the rice, soak it in water, and let it sit for about 15 minutes to double in size.
In a pot, place the rice, cover it with clean water, and cook on low heat for about 10 minutes until it is soft, has doubled in volume, and has absorbed the water, becoming very sticky.
Add the milk, sugar, and mastic, and stir occasionally with a wooden spoon until the milk boils.
Reduce the heat and continue stirring gently until the mixture thickens and has a pudding-like consistency.
Add the chocolate and stir until it melts and is fully incorporated.
Distribute the mixture into the cups and refrigerate for several hours.
Garnish with additional grated chocolate and pistachios as desired.
Tips
Boiling the rice first helps extract the starch and speeds up cooking with milk.
