Vegan Black Bean & Beetroot Burgers

Ingredients

  • 400g ready cooked black beans - 1 tin
  • 1 small red onion
  • 2 cooked or raw beets - they come vacuum packed in most supermarkets
  • 1/2 cup porridge oats
  • 1tbsp of chia seeds OR 1tbsp flaxseed pre-soaked in 3tbsp of water
  • 2 crushed garlic cloves
  • 1tsp salt
  • 1tsp paprika
  • 1tsp black pepper
  • 3tbsp chopped coriander
  • 1tbsp coconut oil or any preferred oil
  • 1-2 green chillies optional

Preparation

  1. Put all ingredients into a food processor apart from the coriander and coconut oil

  2. Note: you can add an egg if you eat eggs instead of the flaxseed or chia seed egg

  3. You can add more oats if the consistency isn’t firm enough to mould into burgers

  4. Heat your oil in a frying pan

  5. Fry the burger patties for a few minutes on each side

  6. Serve in a bun or bun-less with salad and 15min mom avocado salsa
