Vegan Popcorn Falafel with Hummus and Salad

Ingredients

Falafel

  • 2 cans chickpeas (drained)
  • 1 red onion (finely chopped)
  • Juice of 1 lemon
  • 3 cloves garlic
  • 2 tsp Harissa paste
  • 1 tsp Salt
  • 1 tsp Cumin
  • 1/2 tsp Pepper
  • 1/2 cup Flour
  • 1/4 cup Coriander
  • 1/4 cup Parsley

Batter

  • 1 cup Plain flour
  • 1/2 cup Almond milk

Crust

  • 1 cup Panko breadcrumbs
  • Vegetable oil (for frying)

To serve

  • Hummus
  • Salad

Preparation

  1. Put all the falafel ingredients into a food processor and blend into a thick paste.

  2. Take a spoonful of the mixture, roll it into a ball in your palm and place on a plate. Repeat until all mixture is used.

  3. Mix the batter ingredients in a bowl until creamy and thick.

  4. Dip each falafel ball in batter, then roll in panko breadcrumbs for good coverage.

  5. Deep fry the balls until golden brown and crispy.

  6. Serve immediately with hummus and salad.
