Whole Roasted Miso Aubergine

Ingredients

  • 3cm piece of ginger
  • 4 cloves of garlic
  • 2 small green chillies
  • 2 aubergines
  • Sesame oil or extra virgin olive oil
  • 200g vine cherry tomatoes
  • 1/2 tablespoon honey OR agave syrup
  • 3 tablespoons miso paste

Preparation

  1. Preheat your oven to 180 degrees celcius, while preparing your seasoning (ginger, garlic, chillies, onion). Mix all of these together with a hint of oil while grounding them up, making a paste. Pierce the aubergines, and massage this mixture over the aubergines and into the piercings. Pop the aubergine and the cherry tomatoes unto the oven tray, and let it cook for 40 minutes

  2. Mix your agave, miso paste, and a little water to make a paste. After the 40 minutes, drizzle the miso glaze unto your aubergines and let it cook for another 15 minutes
