Beetroot Waffles

Ingredients

  • 1 cup grated golden beetroot - 1 tablespoon water - 1 1/2 cups flour
  • - 1 tablespoon coconut sugar - 1/4 teaspoon salt - 1 teaspoon baking powder - 2 eggs
  • - 1/3 cup flavourless oil - 1 teaspoon vanilla extract - 1 cup frozen blueberries - 1/2 cup maple syrup
  • Put the beetroot in a microwaveable bowl and add the tablespoon of water. Microwave for one minute. Let it cool and add the vanilla and beat in the eggs. - In another bowl mix the flour, salt, sugar and baking powder
  • - Add the wet mix to the flour mix and stir till combined. Take care not to overmix - Carefully spoon mixture into your waffle iron and cook for about 6 minuted till golden brown
  • While the waffles are cooking put the blueberries and maple syrup in a small pan and gently heat
  • Burst the blueberries by squashing them with the back of a spoon
  • Sieve to remove the skins
  • - Serve the waffles with your syrup and some extra fresh blueberries
