Scones

Ingredients

  • 450g self raising flour
  • 300ml coconut almond milk of other plant milk
  • 100g vegan butter
  • 3 tbsp ground flax seed
  • 4 tsp baking powder

Preparation

  1. First mix the flax seed into the milk and set aside

  2. In another bowl mix the flour and baking powder together then rub the butter into the flour with your fingertips until it looks like fine breadcrumbs

  3. Pour in the milk mixture and mix together with your hands until you have a soft dough

  4. Roll out on a well floured work surface to about 2cm thick

  5. Cut out rounds with a 7.5cm cookie cutter

  6. Place on a lined or floured tray and bake at 200C for 10 minutes

  7. We enjoyed ours with whipped cream and raspberries
