Vegan Snickers Bars
Ingredients
- 2 tbsp water
- option 2 for crust:
- 1/2 cup walnuts, pulsed until fine
- 5 medjool dates
- 1/2 tbsp coconut oil
- 1 tbsp peanut butter
- filling:
- 10 medjool dates
- 1/4 cup almond butter
- 1 tsp vanilla
- 1 tbsp coconut oil
- 1/4 cup crushed peanuts
- 2-3 tbsp water
Preparation
Blend in a food processor until a dough forms. Pat down into a parchment lined 9X5 loaf pan. Set aside
Blend everything except the peanuts until smooth. Spread over crust and top with 1/4 cup of crushed peanuts. Freeze overnight
Remove from freezer and slice into 6-8 bars. Coat in melted dark chocolate and return back to freezer for additional 15 minutes to set. Keep stored in freezer
