Vegan Snickers Bars

Ingredients

  • 2 tbsp water
  • option 2 for crust:
  • 1/2 cup walnuts, pulsed until fine
  • 5 medjool dates
  • 1/2 tbsp coconut oil
  • 1 tbsp peanut butter
  • filling:
  • 10 medjool dates
  • 1/4 cup almond butter
  • 1 tsp vanilla
  • 1 tbsp coconut oil
  • 1/4 cup crushed peanuts
  • 2-3 tbsp water

Preparation

  1. Blend in a food processor until a dough forms. Pat down into a parchment lined 9X5 loaf pan. Set aside

  2. Blend everything except the peanuts until smooth. Spread over crust and top with 1/4 cup of crushed peanuts. Freeze overnight

  3. Remove from freezer and slice into 6-8 bars. Coat in melted dark chocolate and return back to freezer for additional 15 minutes to set. Keep stored in freezer
