Waffles

Ingredients

  • - 2 apples, peeled and finely chopped - 2 tablespoons maple sugar
  • - 2 tablespoons water
  • - 1 teaspoon ground cinnamon
  • FOR THE WAFFLES
  • - 2 cups gluten free oats, blitzed - 1/2 teaspoon salt - 1 teaspoon cinnamon - 1 tablespoon maple sugar - 1 1/2 teaspoons baking powder - 2 eggs
  • - 1 teaspoon vanilla extract - 1/4 cup flavourless oil like linseed - 1/2 cup almond milk - Maple syrup to serve

Preparation

  1. Put the apples, maple sugar and water in a small saucepan, bring to the boil. Reduce the heat and cook for about 20 minutes till the apples are cooked but still have a little bite

  2. In a large bowl, mix the blitzed oats, salt, cinnamon, sugar and baking powder

  3. In a smaller bowl, mix the eggs, vanilla extract, oil and milk

  4. Pour the wet mix into the dry mix and stir till fully combined - Let it rest for ten minutes while the waffle iron heats up - Pour the mix into the waffle iron and cook for about ten minutes till golden brown - Serve with the apples and maple syrup
