Cookie Dough Larabars

Ingredients

  • 15 pitted dates
  • 1 cup cashews
  • 1/4 cup cashew butter
  • 2 tbsp vanilla protein (i used @nuzest_usa @lilsipper vanilla protein)
  • sprinkle of salt
  • 1/2 cup chocolate chips (use a vegan or paleo brand depending on the lifestyle you follow)

Preparation

  1. Chop your dates then add to a food processor

  2. Pulse until it’s a sticky, caramel like texture

  3. Remove and put into a mixing bowl

  4. Add your cashews to the food processor and pulse for 20-30 seconds

  5. Add to a mixing bowl

  6. Add in everything else except the chocolate chips

  7. Mix everything together well

  8. Fold in the chocolate chips

  9. Use your hands and press the dough into a big round

  10. Line a brownie pan with parchment paper

  11. Press the dough into the pan and flatter out

  12. Place in the freezer 1-2 hours

  13. Then remove, cut, and store in the fridge or freezer

  14. If you store in the freezer, they last longer but you have to let them sit out a little before eating
