Choc Peanut Loaf

Ingredients

  • 2 eggs
  • 1 single serve container of greek yoghurt
  • 1/2 cup of creamy peanut butter
  • 1/4 cup pure maple syrup

Preparation

  1. Whisk together in a mixing bowl

  2. Combine dry ingredients in a separate bowl: 1 cup oat flour (whizz up rolled oats in a blender!), 1/2 cup almond meal, 1/4 cup cacao powder, 1 tsp baking powder, 1 tsp baking soda, 2 tbsp coconut flour

  3. Add to the wet ingredients, with a few tablespoons of almond milk as needed for a smooth, thin batter. Pour in to a loaf tin lined with baking paper, and top with cacao nibs + chopped peanuts. Bake on 180C for around 35-40 minutes until cooked through

  4. Enjoy with a dollop of yoghurt and a smearing of PB
