Decadent Peanut Butter Cup Cookies with Christmas Sprinkles

Ingredients

  • 2 cups almond flour
  • 1/4 cup all-purpose flour (gluten-free baking flour can be used)
  • 1/2 cup coconut sugar
  • 1 tsp baking powder
  • 1 egg
  • 1/4 cup peanut butter
  • 1/4 cup almond milk
  • Sprinkles
  • Trader Joe's dark chocolate peanut butter cups

Preparation

  1. Preheat the oven to 350F and spray/line a baking sheet.

  2. In a large bowl, whisk together the almond flour, all-purpose flour, coconut sugar, and baking powder.

  3. In a small bowl, whisk together the egg, peanut butter, and almond milk.

  4. Pour the wet ingredients into the dry ingredients and stir until everything is well combined.

  5. Use a cookie scoop to make 15-20 cookies and place them on the baking sheet.

  6. Press a peanut butter cup into the center of each cookie.

  7. Add Christmas sprinkles on top of each cookie.

  8. Bake for 10 minutes.

  9. Remove from the oven and let the cookies cool.
