Easy Moist Chocolate Sheet Cake with Buttermilk

Ingredients

  • 330 g dark chocolate couverture
  • 100 g cocoa powder
  • 250 g butter
  • 6 large eggs
  • 300 g sugar
  • 1 packet vanilla sugar
  • 250 g all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 300 ml buttermilk
  • 50 ml neutral vegetable oil (e.g., rapeseed oil)

Glaze

  • 2 packets cocoa cake glaze (about 200 g per packet)

Preparation

  1. Line a baking sheet (30 x 40 cm) with parchment paper

  2. Preheat the oven to 180°C conventional (160°C fan)

  3. Chop the dark chocolate into small pieces

  4. Melt the chocolate with cocoa powder and butter in a metal bowl over a water bath

  5. Let the chocolate mixture cool for about 10 minutes

  6. Beat the eggs with sugar and vanilla sugar until white and creamy

  7. Add the cooled chocolate-butter mixture and beat well

  8. Mix the flour with baking powder and baking soda

  9. Sift the flour mixture into the batter

  10. Beat the batter well

  11. Add buttermilk and oil to the batter

  12. Spread the liquid chocolate batter on the baking sheet

  13. Bake the sheet cake in the preheated oven for about 25 minutes

  14. Let the cake cool completely after baking

  15. Melt the cake glaze according to package instructions

  16. Spread the melted glaze on the chocolate cake with a brush

  17. Decorate with sprinkles if desired

Tips

  1. The buttermilk in the batter makes this sheet cake incredibly fluffy and moist

  2. The cake yields about 24 pieces
