Easy No-Bake Blueberry Coconut Tart
Ingredients
Base
- 1 cup almonds
- 1/2 cup pitted dates
- 1 tbs coconut oil
Filling
- 2 cups full fat coconut milk
- 1/2 cup blueberries
- 1/2 cup maple syrup
- 1 tbs cornflour
- 2.5 tsp agar / vegan gelatine
Preparation
Whizz the base ingredients in your blender until fine and crumbly.
Press the mixture into your tart casing so it's compacted and set in the freezer while you make the filling.
In a saucepan, combine the filling ingredients and heat until the mixture thickens and the agar dissolves.
Pour the filling over the prepared base and chill until set.

This tart is refined-sugar free, plant-based, and super easy to make with no baking required.
