Easy Raw Vegan Cinnamon Roll

Ingredients

  • 12 medjool dates
  • 1/2 cup raw
  • 1/4 tsp cinnamon (use ceylon cinnamon)
  • 1/4 cup walnuts, very finely chopped (we love @crazywalnuts )
  • maple syrup to drizzle, about 1 tablespoon
  • raw
  • 1 cup raw cashews (soak for a few hours for easy blending)
  • 1 tbsp lemon juice
  • 1/2 tsp of himalayan sea salt

Preparation

  1. Blend ingredients (cashews, lemon juice, salt) until smooth - add water if needed to thin out.

  3. Cut all of the dates in half long-ways, and remove the seed from the center of each one

  4. In a small bowl, mix the

  5. Scoop about 1 tsp of the cream cheese mixture into each date-half. Arrange the dates on a serving platter

  6. Add chopped walnuts over the dates, and lightly drizzle syrup over the top of all of them

  7. Cover and refrigerate until ready to serve
