Easy Vegan Strawberry Shortcake Smoothie

Ingredients

  • 3-4 large Medjool dates, pitted
  • 1/4 cup slivered almonds
  • 1/4 cup gluten-free rolled oats
  • 2 tablespoons hemp seeds (optional)
  • 1 tablespoon chia seeds (optional)
  • 1 tablespoon ground flaxseed (optional)
  • 1 teaspoon pure vanilla extract
  • 3/4 cup frozen strawberries
  • 1/2 cup frozen riced cauliflower
  • 1 1/2 cups vanilla unsweetened almond milk (or milk of choice)
  • 1-2 cups ice cubes

Preparation

  1. In a high-speed blender, add all the ingredients except ice and blend until smooth and creamy

  2. Add 1 cup of ice and blend again until no ice chunks remain

  3. For a frostier smoothie, add another cup of ice and blend again

  4. Pour into one or two glasses depending on if this is a meal replacement or a filling snack

  5. Serve immediately and garnish with fresh strawberries if desired
