Foraged Prickly Pear Syrup
Ingredients
- 1/4 cup water
- lemon juice
Preparation
Prickly pear fruit is packed with potassium, vitamin C, calcium and magnesium.. It contains anthocyanin, a potent antioxidant that gives the pink color! They are a great remedy for a hangover, so use this syrup in a little hair of the dog if you know what I mean
If you live in Texas, you’ve probably seen these around. Thank you to the foraging master, @merriwetherforager for the suggestion of using bbq tongs to pick the ripe ones to avoid the tiny needles called glochids. You can also find them at Whole Foods every once in a while, if you don’t want to bother with getting pricked
Prickly pear fruit (tunas) (1.5 cups pulp)
Cup sugar plus 2 tablespoons
Cup water
