Foraged Prickly Pear Syrup

Ingredients

  • 1/4 cup water
  • lemon juice

Preparation

  1. Prickly pear fruit is packed with potassium, vitamin C, calcium and magnesium.. It contains anthocyanin, a potent antioxidant that gives the pink color! They are a great remedy for a hangover, so use this syrup in a little hair of the dog if you know what I mean

  2. If you live in Texas, you’ve probably seen these around. Thank you to the foraging master, @merriwetherforager for the suggestion of using bbq tongs to pick the ripe ones to avoid the tiny needles called glochids. You can also find them at Whole Foods every once in a while, if you don’t want to bother with getting pricked

  3. Prickly pear fruit (tunas) (1.5 cups pulp)

  4. Cup sugar plus 2 tablespoons

  5. Cup water

  6. Lemon juice

  7. Cut the tuna in half and spoon out the pulp. Measure to about 1.5 cups of fruit

  8. In a medium sauce pan gently bring to a boil with the sugar and water. Reduce to simmer. Stir to make sure it doesn’t stick for 15 minutes

  9. Strain through cheesecloth or a fine mesh strainer. Let cool in a bowl and add lemon once room temperature

  10. Store in a bottle or jar with rubber lid
