Gluten-Free Banana Peanut Butter Brownie Cake
Ingredients
- 6 Oreos or biscuits of your choice (smashed, chopped, or gluten-free biscuits crumbled)
- 2 medium-sized bananas
- 100g smooth peanut butter
- 50-100g coconut sugar or 50g soft light brown sugar (adjust to taste)
- 1 tsp baking soda
- 35g cocoa powder
- 1 large egg
Preparation
Preheat the oven to 160°C and prepare a muffin tray or brownie tray by greasing or lining with baking paper.
Mash the bananas until pureed, then mix in the peanut butter and sugar. Use a whisk to help combine.
Add the egg and mix until well incorporated.
Sieve in the baking soda and cocoa powder.
Gently fold in the baking soda and cocoa powder, being careful not to overmix.
Sprinkle the chopped Oreos on top of the batter, pressing them in slightly.
Bake in the preheated oven for 20 minutes.
Serve immediately or let the brownies cool in the fridge for a bit before cutting and serving.
